1. Why Vivici Matters


Last week, Vivici secured €12.5 million from the European Innovation Council's Accelerator programme. The Dutch startup, which produces dairy proteins via precision fermentation, has now raised over €45 million since its public launch in August 2023. In a sector where funding enthusiasm has cooled considerably since the 2021 peak, that is significant.


But the funding itself is not the story. The story is what Vivici's trajectory reveals about the precision fermentation sector's commercialisation challenge, and why the binding constraint is no longer science. It's industrial economics.


Vivici makes two products. Vivitein BLG is beta-lactoglobulin, the primary protein in whey, nature-equivalent, lactose-free, produced via fermentation rather than extracted from milk. Vivitein LF is lactoferrin, a bioactive protein with applications in women's health, gut health, and performance recovery. Both have FDA regulatory clearance in the United States. Both have first customer offtake agreements signed and being fulfilled. A life cycle assessment by CE Delft (ISO 14040-44) found that Vivitein BLG uses 86% less water and has a 68% lower carbon footprint than conventional whey protein.


In under three years, a company most people outside food-tech have never heard of has moved two products from concept to commercial reality. In biotech terms, that is exceptional speed.


2. What Makes Vivici Structurally Different


Most precision fermentation startups follow a familiar pattern: academic founders, venture backing, a race to prove the science, and a scramble to build commercial capability once the technology works. Vivici is the inverse.


The company was formed in December 2022 by DSM-Firmenich and Fonterra, a global biotech leader and one of the world's largest dairy cooperatives. This is not venture-building in the traditional sense. It is corporate venture creation: a deliberate, well-resourced spin-out designed to commercialise a technology both parents understood intimately but weren't structured to pursue at startup speed.


The consequences of this corporate DNA are evident throughout Vivici's execution. CEO Stephan van Sint Fiet is a former IFF executive, having spent decades at one of the world's largest ingredients companies before taking the helm. The CTO, Marcel Wubbolts, brings deep biotech and scale-up expertise. The commercial team was engaging potential customers while scientists were still perfecting the first grams of BLG. Vivici's own published thinking on financing strategy ("Financing the Future of Fermentation," November 2025) reveals an unusually sophisticated understanding of the capital markets in which it operates: milestone-based fundraising, selective innovation, and creative partnerships across the value chain.


This is not the execution pattern of a startup learning as it goes. It is the execution pattern of a company that started with the industrial playbook already written.


3. The Technology Works. The Hard Part Starts Now.


For the first two years, Vivici's challenge was proving that precision-fermented dairy proteins could be produced to a high standard, cleared by regulators, and sold to customers. That phase is largely complete. The technology is validated. The products work. Customers are buying.


What comes next is harder, and it is a challenge Vivici shares with every company trying to commercialise precision fermentation at food-industry scale.


The core problem is a structural financing mismatch. Building industrial fermentation capacity at the volumes food companies require demands hundreds of millions in capital, the territory of project finance. But project finance lenders expect 10- to 15-year offtake agreements to underwrite that investment. For a novel ingredient in a fast-moving food market, those agreements don't exist. Venture investors, meanwhile, are typically uncomfortable with the capital intensity of industrial manufacturing.


The result is a gap. Vivici has bridged it so far through partnerships: Liberation Bioindustries for US production, exploration with the Abu Dhabi Investment Office for potential capacity in the Middle East, and access to the Biotech Fermentation Factory pilot facility in Ede, the Netherlands. A technology deal with Danish startup Enduro Genetics delivered a 30% boost in production yields, more output from the same fermentation capacity.


These are smart moves. But they are bridges, not solutions. At some point, Vivici will need either contracted manufacturing capacity at a scale that doesn't yet exist in its partner network, or owned facilities that require a level of capital investment beyond what venture rounds typically provide. The EIC funding helps; €12.5 million in blended grant and equity is a strong signal, but it does not solve the structural problem.


4. The Two-Speed Regulatory Reality


There is a second tension that Vivici will need to manage, and it is as much political as it is commercial.


Both Vivitein products have FDA GRAS (Generally Recognised As Safe) status in the United States. The US market is open. European regulatory approval, via the European Food Safety Authority (EFSA), is in process, but the timeline is measured in years, not months. CEO van Sint Fiet has said he hopes for a swift review "ideally within the 18 months that EFSA sets as a timeline for itself." That phrasing, "ideally", is telling.


The commercial logic is unambiguous: pour resources into the US market while EFSA deliberates. But Vivici is a Dutch company, built on Dutch soil, with Dutch public investment from Invest-NL and InnovationQuarter, and now European public funding from the EIC. A company perceived as building its commercial future in America while European taxpayers fund its R&D faces a narrative risk it hasn't yet had to manage.


This is not an argument against the US-first strategy. It is a recognition that Vivici will need to manage the European narrative with the same discipline it has applied to everything else, visible European activity, partnerships, and readiness-building that make clear the home market hasn't been abandoned.


5. What This Means for the Sector


Vivici sits at the front of a small group of companies attempting to turn precision fermentation from a scientific achievement into a commercial industry. The science has been proven. The regulatory path, while slow, is navigable. The environmental case- 68% less carbon, 86% less water- is compelling and independently verified.


The binding constraint is no longer whether the technology works. It is whether the industrial economics can be made to work at the volumes and price points that food companies require. This is not a problem unique to Vivici. It is the defining challenge for the entire precision fermentation sector.


The companies that solve it will do so not through better science; the science is already good enough. They will do so through creative manufacturing partnerships, disciplined capital allocation that treats each funding round as a milestone-delivery exercise rather than a storytelling opportunity, and commercial traction deep enough to justify the infrastructure investment that industrial production demands.


Vivici's team is exceptional. Its products are validated. Its commercial momentum is real. What the next 18 to 24 months will test is whether execution speed and partnership creativity can close the scale-up gap before the funding windows narrow. The technology is ready. The question is whether the industrial system around it is ready too.


6. Implications for the Dutch and European Innovation Ecosystem


Vivici is exactly the kind of company European innovation policy says it wants to create: deep-tech, sustainability-driven, born from industrial expertise rather than pure academic research, capable of competing globally. The EIC's backing confirms that the ecosystem sees the same potential.


But Vivici's trajectory also exposes the gaps in that ecosystem. The scale-up financing mismatch is not a company-level problem; it is a structural gap in how Europe funds the transition from validated technology to industrial production. The regulatory asymmetry between the US and the EU creates a commercial pull toward the American market that runs counter to the policy objective of building European industrial leadership.


If Vivici succeeds, if it navigates the scale-up gap, secures EU approval, and builds a commercially viable precision fermentation business, it will be a proof point for the entire European food-tech sector. If it struggles, the lessons will be structural, not company-specific: Europe's innovation ecosystem can create the technology, but it still hasn't figured out how to fund the factory.
